Pork rillettes made by La Belle Chaurienne, a renowned producer headquartered in the historic market town of Castelnaudary in southwest France. The texture of rillettes is rougher and more rustic than that of pate. Rillettes are best experienced when served with fresh French bread and cornichons, which is the traditional way to enjoy them.
